What I love about eating in this country is that there’s always something delicious to taste and something new to discover—including for me. I’m so excited to take this journey with you as we focus on Israel through the dual lenses of food and culture—coming together at the table, in the markets, and in peoples’ homes. Along the way we’ll meet some of my favorite friends from the worlds of food and wine—I know you’ll love them, too. Since we can’t eat 24/7, we’ll also touch on the history of modern and ancient Israel as well as dive into the country’s vibrant art scene, accompanied by the people that know it best. 1 - Sunday (October 30) : And so it begins!

  • Tasting tour and spice workshop at Machane Yehuda Market - What better way to kick off this epic journey than with a tasting tour of Jerusalem’s iconic Machane Yehuda market? Set in the heart of the city, this bustling, multi-ethnic, open-air market is bursting with life, art, and flavor, an adventure for your taste buds, and an eye-opener to the richness of Israeli food culture. Savor first-hand the rich aromas, colors, sounds, and flavors that this iconic market offers. We will stop at a spice shop in the shuk and create a blend from Adeena’s cookbook, Sababa, that everyone can take home.

  • Lunch at Azura - Enjoy a sit-down lunch at this family-run institution in the Iraqi section of the market. Famous for its Turkish-inspired delicacies that are slow-cooked to perfection atop kerosene burners, Azura is an integral part of Jerusalem’s culinary history.

  • Opening program and dinner at the home of Hedai Offaim - Hedai Offaim is a chef, writer, and food entrepreneur who will be featured in Adeena’s upcoming cookbook, Shabbat. He is the co-founder, with his brother Yinon, of Offaim Farm, which sustainably raises livestock, makes cheeses, and grows produce used in his restaurants. When he cooks at home, Hedai utilizes just-picked ingredients from his property and the surrounding region–figs, loquats, olives, lemons, grapefruits, herbs, pomegranates, and more.

2 - Monday (October 31) : Jerusalem Stories

  • Walk from the hotel to the Damascus Gate to begin your tour

  • Tour Jerusalem’s Old City - Encounter the people and places of the storied Old City for a greater understanding of the mystery and romance of Jerusalem. In the Jewish Quarter, peel back the layers of Jewish history from the time of the First Temple until the present day. In the Christian Quarter, visit the fascinating Church of the Holy Sepulchre. You will also have the opportunity to visit the Temple Mount. Explore the complexity of a city that is holy to three major religions, and meet the people of the Old City–including Muslim and Ultra–Orthodox women.

  • Cocktails at Rooftop Restaurant at Mamilla - and meet the chef! - Engage in conversation with the chef of Mamilla's Rooftop Restaurant, Simone Shapiro - Adeena’s friend and one of Israel's prominent female chefs.

3 - Tuesday (November 1) : Arts and Leisure

  • Foraging with Uri Mayer-Chissick and Sustainable Eating Discussion - joined by Naama Szterenlicht from Zoara Distillery - See Israel from the roots up through wild food foraged straight from nature – and taste dishes prepared today from local varieties that have grown here throughout history. Dr. Uri Mayer-Chissick, an expert on the history of local food and nutrition in the Middle East and the author of the Israeli guide to foraging wild edible plants, will be your host, teacher, and cook for the afternoon. Adeena’s friend, master distiller Naama Szterenlicht of Zoara Distillery, will join the group to discuss Zoara’s hyperlocal distilled spirits made from Medjool dates and accented with local herbs. She’ll also lend insight into why Israel’s craft spirits industry continues to blossom.

  • Late lunch at Rutenberg - Rutenberg restaurant is situated on the banks of the Jordan River, next to the old Gesher conservation site. The three bridges over the river and 10,000 years of human history attest to the fertility of the flora and fauna of the Jordan Valley. Meet chef/owners Hila and Yizhar Saar, the dynamic duo responsible for putting Rutenberg on the culinary map. Through constant research and regional exploration, they continue to elevate seasonal, local cuisine to new heights.

4 - Wednesday (November 2) : Northern Lights

  • Erez Komarovsky – Cooking workshop and meal in Mitzpe Matat - Erez Komarovsky is considered the godfather of Israeli baking and one of Israel’s most prominent culinary figures. As a partner in Erez and Hanan Catering, Erez designs and executes showstopping, soul-stirring food at Israel’s most exclusive events (Adeena’s was lucky to have him cook at her wedding!). Erez, who is the founder of the legendary Lehem Erez bakery as well as the author of many cookbooks, will host you in his Galilean home, which will include a tour of his eleven-dunam garden, and where you will have a bird’s eye view of his master bread-baking skills in one of several wood-fired taboon ovens.

  • Short tour of Tzfat - Tzfat (Safed) sits at a higher altitude than any other city in Israel and has been known since the 16th century as a major center of Kabbalah, Jewish mysticism. Tzfat's mystical aura adds to its special status as one of Israel’s four holy cities (along with Jerusalem, Tiberias, and Hebron). The old synagogues, narrow alleyways, and artists’ studios add to the hilltop city’s unmistakable charm. We’ll stop at a couple of the city’s storied cheesemakers, known for making special varieties only found in Tzfat.

5 - Thursday (November 3) : Jewels of the Land

  • Lookout over the Israel-Lebanese border - Hear about the geopolitics of the area with Lieutenant Colonel (Res.) Sarit Zehavi, CEO and founder of Alma, a non-profit independent research and education center dedicated to creating easy to understand information about the security situation on Israel's northern border.

  • Tour of Ilsar Truffles in Merom Golan, followed by a couscous lunch - An Israeli startup, Ilsar partners with local, experienced farmers to cultivate top-quality black winter truffles (Tuber melanosporum) in the volcanic landscapes of northern Israel, bringing the age-old passion for superb truffles to delicacy lovers around the world. You’ll hear the company’s fascinating story and, of course, taste the fruits of their labor.

  • Jeep tour of the Golan - While traversing the rich landscape in Jeeps, learn about the history, flora, and fauna of the area. Stop for a lookout over the border with Syria from Mount Bental to gain a better understanding of the geography and strategic role this region plays. Your local guide will touch on the nuances of living in such close proximity to the Syrian border, and how Israel balances its security concerns with its undertaking of ongoing cross-border humanitarian initiatives.

  • Wine Tasting at Mika Winery - Set on Moshav Natur in the Golan Heights, Mika Winery was established in 2006, out of a desire to live and uphold the values of land, family, and creation. Along with the wines, the highest quality products such as olive oil, bread, seasonal fruits, baked goods, and cheeses from Natur Dairy Farm and other local purveyors will be served.

  • Late evening musical tour of Um el-Kanatir and poyke dinner - Um el-Kanatir, also known as Ein Keshatot, was a Jewish village from the period of the Mishna and Talmud, with a magnificent synagogue at its center. The synagogue features the original Ark Complex – the most preserved and magnificent ever to be discovered in Israel. The synagogue was excavated and reconstructed with advanced technological methods, and today it stands at a height of one story. The Ein Keshatot site also offers a visit to the village spring, which flows into ancient pools surrounded by shaded areas. Take in this rich history, then enjoy live music and a sumptuous dinner prepared poyke-style, in wood-fired cast-iron vessels.

  • Other option: Galileat - Together with your hosts in their private home, prepare traditional Druze Galilean dishes and enjoy the feast you create. Learn about Druze culture and history from your hosts and from the food you eat.

6 - Friday (November 4) : On to Tel Aviv

  • Morning visit in Nazareth with Turfenda or Rada Bullus - Nazareth, Israel’s largest Arab city, is a fascinating place. Set in the Lower Galilee, it combines traditional, simple Arabic charm, Christian history, and grand old Arabic architecture. It is also a city of powerhouse female cooks such as Turfenda of Al Mashadawi Bakery, who oversees production of delicious fatayer (savory pastries filled with greens and cheese) and M’sakhan (sumac chicken and onions on flatbread). Tour the city and taste these Nazarene delicacies while soaking up the city’s unique, welcoming atmosphere.

  • Drive to Tel Aviv and check in to hotel

  • Bake challah before Shabbat with the Challah Prince - Learn to braid from the best - the Challah Prince himself, Idan Chabasov! A social media star known for his elaborate but doable challah designs, Idan has become the go-to source for inventive challah creations. While living in Berlin and attending Shabbat dinners for Israelis in the city, Idan realized there was no challah being served, so he decided to learn to bake his own. The rest, as they say, is Instagram history. A true artist whose medium is dough, Idan recently moved back to Israel, where he uses challah baking as a creative and spiritual outlet. He evangelizes the gospel of challah as a ritualistic process of observation and patience with the most delicious and visually arresting reward.

  • Dinner at HaBasta - Casual in appearance but sophisticated in its cooking, HaBasta is located on a side street of Tel Aviv’s Carmel Market, from where almost all its produce, fish, and meat are sourced. An extensive daily changing menu is hand-written. The dishes, while simple, are satisfyingly complex in execution. The international wine list is equally exceptional.

7 - Saturday (November 5) : Seeing Through Multiple Lenses

  • Anatomy of food photography and styling with Nurit Kariv and Dan Peretz - Adeena has worked with photographer Dan Perez and stylist Nurit Kariv on both Sababa and her upcoming cookbook, Shabbat (not to mention magazine features). Join Dan, Nurit, and Adeena as they take you through their creative process cooking, plating, styling, and capturing a recipe on camera – all in Tel Aviv’s natural light.

  • Shabbat brunch - Indulge in a Jewish Shabbat Brunch celebrating a variety of classic ethnic foods that highlight Israel’s soulful culinary diversity. These dishes are brought directly from the homes where the food was cooked, allowing families to share their heritage and talents with a wider audience.

  • Tour the city of Jaffa - On a walk through Jaffa, discover the ancient and modern situated side-by-side. Stroll through the alleyways of the Old City filled with artist studios as well as archaeological discoveries. Discover which Jewish, Muslim, and Christian stories took place in the city.

  • OPTIONAL: Fashion tour - The tour addresses the relationship Israeli fashion has with the various aspects of living in Israel including identity questions, sub-groups in Israel, immigration to Israel, wars and cultural life and social entrepreneurship. Meet old and new fashion brands, designers who use ancient crafts and other professionals who use the best technology. We will walk, talk and shop.

8 - Sunday (November 6) : Tel Aviv - Old-New City

  • Breakfast, tastings, and conversation with Michal Bouton - Amita Bakery owner and pastry chef Michal Bouton is making her mark on the local patisserie scene by fusing local ingredients and traditions with classic European baking techniques. She’s rewriting the language of local baking, creating an evolving modern formula inspired by ancient history.

  • Tour of Tel Aviv - Explore modern Tel Aviv, whose first roots were planted in 1909. Coined the "White City" for its many white buildings that were built to reflect the heat, it is known for its stunning collection of Bauhaus, Eclectic, and International styles of architecture. The area is densely populated and rooted in history, rooted in its past, but looking to the future with impressive skyscrapers, many populated by some of Israel’s multitude of startup companies.

  • Carmel Market Tasting Tour - Tour Carmel Market (Shuk HaCarmel) with Adeena, whose book, Sababa, is based on her life living meters from the market and the adjacent Yemenite Quarter. Through her eyes, you will discover the culinary vibrancy of Tel-Aviv via the people she knows and the food they sell and serve in her culinary playground/backyard. The market that was founded over 100 years ago, can now reveal its secrets, stories, and legends to you.

  • Lunch at M25 - One of the top meat restaurants in the city just happens to be this unassuming, tavern-style eatery. Featuring one-of-a-kind Israeli dishes, with fresh meat taking the spotlight, carnivores can rejoice in the deliciously juicy flavors, and a menu that changes daily.

  • Everything Art - Tours and more with Shirel Horovitz - Using drawing, sculpting, video and sound, Tel Aviv based artist, Shirel Horovitz, creates performances and installations exploring cities, communities and the relations between people and space. Having earned her BFA from Bezalel Academy of Art and Design in Jerusalem and her MA (with distinction) from The Interdisciplinary Art Program in the Arts at Tel Aviv University, Shirel weaves into each experience aspects of social issues, politics, economy, religion and more to create a vivid and nuanced image of the Israeli reality. Her knowledge, passion and love of all that is art, Tel Aviv, and Israeli history are nothing less than contagious.

  • Dinner at Dok - A Tel Aviv original, Dok, under the helm of its chef and founder, Asaf Doktor, prides itself on cooking exclusively with local, seasonal ingredients. Its highly inventive dishes are paired with a specialty cocktail menu that makes use of Mediterranean herbs grown in their garden. Enjoy watching the theatrics of the kitchen unfold from the open kitchen.

9 - Monday (November 7) : Bringing it Home

  • Tour of Levinsky Market and talk with Gil Hovav - The Levinsky Market specializes in spices and Mediterranean delicacies. It is, in many ways, the best market in Tel Aviv, known for its variety, freshness and special atmosphere. Whether you are looking for a rare Indian spice or some good quality saffron - this is the place. Shops offer a cornucopia of excellent cheeses, smoked fish, wines and other delicacies. Tour the market and have "tastings" throughout. Speak with Gil Hovav, one of Israel's leading culinary journalists and learn about his connection to food in Israel.

  • Gazoz workshop with Benny Briga - In his recent book, Gazoz, co-authored with Adeena, Benny shared the story of how he created an entirely Israeli artform based on sparkling drinks. At his studio, he will show you how to craft your own drinks by layering flavors and creating syrups utilizing fermented fruit, vegetables, herbs, flowers, and other flavors.

  • Lunch at Ouzeria with Chef Avivit Priel Avichai - Round out this amazing culinary experience with lunch at Ouzeria, a fun, festive, and popular mezze restaurant in the heart of Levinsky Market. Meet Avivit Priel Avichai, one of Israel’s most respected chefs.

  • Farewell at Asif: Culinary Institute of Israel - Asif is a nonprofit organization and culinary center dedicated to cultivating and nurturing Israel’s diverse and creative food culture, a joint venture of the New York City-based Jewish Food Society and Tel Aviv’s Start-Up Nation Central. Tour Asif’s rooftop garden, test kitchen, and library, then do some last-minute culinary souvenir-shopping in their charming shop. Toast farewell with a glass of Israeli sparkling wine.

Health Insurance It is a condition of your booking through Via Sabra / Israel4All, as well as the State of Israel, that you obtain travel health insurance which includes coverage for COVID-19.

Travel Insurance We strongly recommend that you purchase full travel insurance which includes coverage for ‘cancellation under any circumstances and for any reason’. It is recommended to purchase insurance as soon as the booking is made, as this cover is often dependent on purchasing as close to the time of booking. You can purchase travel insurance with our partner, Travel Insured, an experienced company and one of the largest in the industry through this link.

What's the weather like in Israel?

It is always best to check the weather forecast beforehand as the weather during Spring and Fall seasons can be unexpectedly warm or cold.

Spring (late March – May): Daytime temperatures are generally very pleasant - around 65-70°F, though it can still be hot in some areas (such as the Dead Sea and Eilat). There is a slight chance of rain, but it doesn't happen often. It can be cooler in the evenings in the North and Jerusalem - approximately 45°F.

Summer (late May - late September): Temperatures are usually in the high 80s-90s. At this time of year, humidity will be highest in Tel Aviv and Tiberias. Other areas such as Jerusalem are drier and cooler, particularly at night. The desert, Masada and Eilat are extremely hot, but dry. It will almost never rain in the summer in Israel!

Fall (late September – November): Same as Spring, but the rain can begin towards the end of the season.

Winter (December - early March): Winter can be mild and sunny, or severe and overcast. There's often heavy rain and, in January and February, even snow at times! Temperatures will be in the 50s-60s most places, but in the 40s in Jerusalem and the Galilee hills, and cold at night. Pack layers and be prepared for anything!

Will Adeena be present the entire time?

YES! Adeena will be leading the trip and will guide the group through experiences from her perspective.

Is the trip strictly kosher?

Though the trip is not certified kosher, most of the meals will be kosher style and we can accommodate most dietary restrictions (you can check with us first).

Are all meals included?

Not all - but most meals are included.

Terms of Payment

Deposit is due immediately to secure the booking.

Balance for the trip is due no later than 45 days prior to first day of trip.

Cancellation Policy

Bookings can be cancelled within 48 hours, with a full refund.

Should it be necessary to cancel or postpone the tour due to force majeure circumstances, or Israeli government-imposed/air flight restrictions related to COVID-19,  a full refund may be possible, minus a $200 per person service fee.

For cancellations made:

  • Up to 45 days prior to departure, any payments made above the deposit towards the tour will be refunded. The deposit is non-refundable
  • 45 to 30 days prior to departure, 50% of the total tour cost per person will be refunded
  • 29 to 8 days prior to departure, 25% of the total tour cost per person will be refunded
  • 7 to 0 days prior to departure, the client will incur 100% of the cost of the tour

Should members of a group booking cancel their participation, their deposits cannot be applied to the balance payment of other group members.
